Forgotten Hope 2 has the Italian army in it. Has Bardia, Keren, Giarabub, and Operation Hyacinth (the raid on Barce airfield).

Voices are also modelled for the Italians.

Battlefield 1942 - The Road to Rome also featured the Italians IIRC.

Red Orchestra 1 mod - Mare Nostrum also features Italian forces, been a while since I've played that though.

Fairly sure most hex wargames that feature the Med theatre will model the Italian forces. Obviously there's also Hearts of Iron (I did quite well as the Italians in a game once, in fact they're one of my favourite countries to play.)

IL2 has the Italian airforce, with Italian aircraft modelled, you can download mods for it too which flesh things out a bit.

Those are what I can think of, off hand.
