NewUIs by TDW is peraphs the most functional and customizable UI available for SH5. It is also under constant development and the one with the best support, but due to its many features it is also quite heavy on memory and, depending on the spec of your system, might affect its performances if used together with other heavy mods.

Ui-Boat and DrJone's
CSP Magui Interface are as well excellent options. Maybe not as full featured as NewUIs, they are anyway not so demanding when it comes to system resources. One of their strong points is their great graphical appeal, giving them an "old times" feeling that NewUIs is partly missing.
