I have done it in FSX, with the Bubble Sextant Gauge.
Using a Sextant itself and plotting the results is not so hard. What is needed is some form of almanac to predict where the stars should be at a particular time, and some kind of visual chart to explain the night sky you can see, so you can get your bearings.
If you have an iPhone or similar, two very good apps I recommend for this job is the iNA, (US nautical almanack) and a program called "Stellarium".
