It doesn't take more torpedoes, it just takes longer for the ships to sink. This is realistic, and having them blow up spectacularly upon being hit was not.
The Academy scenarios are harder. On the other hand you don't have to do them. GWX gives the full 1500 renown just for completing the Navigation course. Everything else is just practice now, which is why it's harder.
