I havent tried that so I can't say for sure, but that's just a gameplay setting. I would expect it to still be available to you in the options.

I think you should be prepared for some frustration though, because I think it will be much harder to sink anything very big. RFB doesn't just require that you inflict a lot of damage on the target. You have to damage the hull so that enough compartments flood. This requires aiming torpedoes for multiple locations, which isn't possible with auto-targeting. You might get lucky and hit in different spots anyway, if you time another shot while the target is slowing or turning, for instance. But you can't take control of that in any direct way.

To be honest, I think you should take on manual targeting. It isn't extremely hard to figure out, but doing it is one of the more satisfying things you'll ever do in a game. In the end, the hardest part of it isn't making all the devices work. It's learning to sail an intercept course and position your sub properly so that you aren't spotted, don't have to rush, and have the best possible chance of success.
