The absolute bare mininum I'd suggest would be:

TheDarkWraith's NewUI 6.8.0

Also, perhaps later:
TheDarkWraith's FX Update
TheDarkWraith's IRAI AI upgrade (personally this kicks my ass too much to enjoy, so I need to edit it down)
MightyFineCrew
Open Horizons II
All of Trevally's scripts and Harbor Pilot scripts
Sound mod, tools mod and environment mod of your choice

or perhaps MO, the super mod which includes a lot of these listed mods already.

But you'll want NewUI first and foremost.

There's a LOT to even just that one mod though, so make sure you read the instructions.
