This would be correct if the prefix 'un' still meant 'not' and referred to the possibility of the subject being stained.
However in your formulation it is short for 'unknown' and refers to the subject, not the possibility of staining him/her with something.
Consequently it would be more correct to think of if as
un(known)
sub(ject who is)
stainable.
