Install a interface mod and you will have squares on your map... why you do not want to have squares on the map?... the situation that you spoke has nothing to do with the tutorial that you saw: how to intercept an convoy''... in your situation you must to learn one of these 2 method:

22) How to use the 4 bearing method in SH5 (Kuikueg methode - i recomand for all SH5 players that do not know this method to find time to watch this video tutorial) ==> Link

this is for a single ship.... if you are speaking about a convoy... than if the sonar say it is long range and is closing try to advance a bit and listen... you can easy observe if the convoy is moving from your left to right or from right to left... when you will have on hydro that the ship is closing and you have short range you have chances to visual spot the convoy and find the data (speed, course, etc)
