Almost every submarine memoir I've read mentions pretty exact numbers for depth charge attacks (both US and German). I think they counted them as a matter of pride ("see what we survived!") and info for naval intelligence (perhaps an enemy stingy with DCs was lacking supply or manufacturing capabilties). In Werners "Iron Coffins" he mentions DC attacks up to 200-300 DCs, so obviously many vessels are participating and they have some means of re-supply while at sea.
