And that pic, is a group of people unsuccessfully shooting rapids. I can't tell if that's an oar boat, or just a regular raft. The guide's paddle/oar, and I only see one, must be perfectly level to the camera, so I think it's a regular raft. If you notice, the guide, who is usually seated on the stern, is flying through the air, about to pass over the paying customers who will get a good laugh out of it, and then tip the guide even more later.

It's called a guide ejector. It's when you take the boat down over a hydraulic, and into another one, but you snub the nose of the boat into it, causing it to fold up momentarily, kinda like a fish flipping its fin. This causes the guide to go flying.

While enjoyable to watch, trust me, as the guide, they're embarrassing. Usually the guide(s) that got ejected each day had to buy a round for the other guides. But like I said, the guests/sheep usually made up for it with a bigger tip at the end of the run.
