Before you try to install GWX3, make sure you have deleted the "SH3" folder that your previous install of the game created in My Documents (this would be the folder where your career/player files were stored).

Then it's always a good idea to run some kind of registry cleaner software to remove any leftover files or registry entries that may have been created by your previous install.

If you don't already have that kind of program on your PC you can get a free trial version of one here, it's been used and recommended in these forums many times:

When you are ready to install GWX3, all you have to do is double-click on the GWX3.exe file to run it and it will begin the installation process. It will ask you where you want to install it - direct it to the folder that contains your fresh new unmodded install of the stock game.

GWX3 will also install JSGME, the JoneSoft Generic Mod Enabler, which will make it easy for you to enable/disable the optional mods that come with GWX3 as well as most other mods that you find and want to try out. However I believe the version of JSGME included with GWX3 is not the most recent one, so it's recommended that after your installation is complete you open JSGME (you should have an icon for it on your desktop) and use the update feature there to get the latest version.

I don't have SH5 but if you check the forum dedicated to it you will surely find a wide variety of opinions on it. From there you'll have to make up your mind whether or not you want to give it a try as well.
