Just set your depth (manually, i.e. hold ctrl and mouse over the depth required) to 7/8 metres, make sure you are in the conning tower when you do it. I have been following a convoy with escorts from a distance of 3000 metres, works like a dream. Also try using Historical U-Boat specs, this fixes the depth holding problems
