I regularly dive to listen for contacts and then when I detect a ship I steer towards its bearing... but im not having much luck.

Playing with map contacts OFF adds a huge amount on uncertainty and fog of war, doesn't it?
Everything you do depends on you, not some computer AI guy. Probably why a single convoy encounter takes hours, you cannot zip along at 32x in the dark--you have to stand watch and whatever those shapes are out there, it's up to you to determine.
Map contacts OFF is a whole level of game higher.
