After a patrol or two, you're transferred to Wilhelmshaven, on the other side of Denmark. Later you'll get bases in France and probably Bergen, Norway.
SHIII had a mod that moved the "spawn point" for subs docked at Kiel to the western outlet of the Kiel Canal, though, maybe someone could make something like that for SH5?
