As kiwi said, there's the way of clicking that button.
However, if you want to quote only a part of a post, you can just manually type [quote*] (without *), then copy-paste the text of the post you want to quote, then add [/quote*] (again without the *) at the end. It will look like any regular quote.
If you want to do a couple of partial quotes in one post, you can do it just the same as stated above, but to let others know whom you quoted each time, you can use [quote=username*]text to quote[/quote*] (again without the *). If you do it this way, the quote will show the username at the top of the quote box, like this:
