If you're going to be playing the US campaign in the Pacific, you have a choice between Trigger Maru Overhauled, Real Fleet Boat and Game Fixes Only. All have their supporters, and all are good. With any of them you'll want Run Silent, Run Deep, The Campaign, which rewrites all of the ocean traffic to more accurately reflect the way it was.
If you're sticking with the Atlantic, there is only one: Operation Monsun; and it's a good one, especially when used with its follow-on, Operation Monsun Enviromental and Graphical Update.
There are lots of cool single mods that adds to the experience, but those are the main ones that make it worth playing.
