Yes it will. You just have to economise on speed and fuel.
Yes this was done on a regular basis during the war - 6 Knots is the speed of travel.

A real Type VII running economy cruise would run on one Diesel at any given time - this was changed every 4 Hours to equalise wear.

The active diesel would be clutched to its E-machine which would keep the batteries on float - the other shaft would be clutched to its E-machine and driven off that.

This configuration was more economical than running at the same speed with both diesels.
