The Bismarck carried around 1000 rounds but there were 8 guns, making a total of around 125 rounds per gun. With WSM allowing you access to only one of the guns, the ammunition allocation should be per gun rather than per turret.
I assume you're using the GWX version of the mod - there are actually 360 rounds per gun modded in WSM but if you're using GWX you can't access the AP rounds as GWX only allows HE, which is historically accurate for u-boats but not for surface ships.
