they have crush depths for surface ships too so that can be what gives you the delayed sinking but its time related as well so if it takes too long to sink it will not give you credit for it.
many people dont realise ships will repair damage while you wait so it can cost you more torps to wait for it to sink.
if it sinks with 3 torps but you wait between shots to guage the results then it could need 4 or 5 to sink her because they repair as you wait.
their repairs arent like ours where things get fixed but they do stop the flooding and such so its always best not to try and stretch your torpedos too far by waiting on results.
