Open the sub's .sim file using S3D (so that's Data\Submarine\Subname\Subname.sim).
Inside you'll find a "unit_Submarine"-controller. click it, and in the right window look under unit_Submarine---unit_Ship---obj_Hydro---Surfaced and now change the draught into any desired value
