Default Firing torpedos?

First off, very new to this game so I'm having problems firing torpedos. I'm no good at it to begin with so I'd like to do it simply. I have a few problems so I'll outline them:

1) I can't tell where ships are when the sonar announces their bearing. Does that mean if they're at bearing 241, I can point my periscope at the 241 notch and that's exactly where the ship is?

2) I generally can't tell where anything is underwater so I started surfacing the ship so they appear on the map, but then I found out you could just raise the periscope and it'd do that to, but either way it gives away your position. How do you find out where a ship is so you can shoot it down without using a periscope or surfacing? I figure it has something to do with bearing.

3) I also tried using the TDC to fire off torpedos, but the torpedos always miss and I can only fire the torpedos in a left direction, so I usually end up spinning around in the water aimlessly until the ship just happens to cros over the torpedo line and I fire off shots. Is there any easier way to fire torpedos in the right direction?
