Well inderectly it does have to do with the economy.
When peoples pockets are flush with money they like the 'ambiance' and 'atmsophere' and are willing to or dont notice the markups.
When people are living paycheck to paycheck, worrying about their mortgage and retirement $4.00 seems like a lot to pay for a cup coffee.
I know its about Circuit City who doesent sell coffee but the analogy is there.
