What rank is usually assigned to each station modeled in DW?
 

For example, what is the rank of the person running an ASTAC on the Perry frigates? Broadband SONAR on the 688i? SONAR station on the P-3C? etc.

For the FFG these are the ranks you would expect.

SQS-56 Operator - E-1 to E-5
SQR-19 Operator - E-1 to E-5
SQQ-28 Operator - E-4 to E-5
Sonar Supervisor - E-5 to E-6
ASTAC - E-5 to E-6

For a 688 the ranks that are normal.

Broadband - E-1 to E-4 (Not only Sonar Technicians stand this station it's not uncommon to have Yeoman or another rate stand the watch)
Towed Array (Narrowband/Broadband) - E-4 to E-6
Sonar Supervisor - E-5 to E-6 common (I have seen on more than one occasion though in watchsections E-7 and E-8 Sonar Supervisors)

Depending on the operations that are going on depends on the mix of experience you get in the watch sections. Of course it is limited by what the mix of the sonar division is on the boat that is out there.

What about the SH-60?

For battlestations, I was sonar supervisor and my rank was LtJG.

I stood the FRAZ display watch as a E-3. As stated, it depends on the mix of ppl to stand the watch. Don't forget the fathometer watch calling out the current depths to control.

I know the the Radar Operator can be a Petty Officer 2nd Class.

Weapons Coordinator was called SWC (swick, ship's weapons coordinator) and was stood by a FC1/OS1 to FCCS/OSCS (E-6 to E-8) depending... IIRC sometimes a JO (ENS or JG) would take it. Weapon Control was called something else (I forget what, might have been fire control system operator) but it was stood by an FC3 to FC1 (E-4 to E-6). CIWS RCP operator (that button under Weapon Control) was a FC3 or FC2. EW was actually a group of watchstanders, but the EW Sup was a senior EW2 or EW1.

Let me think some more... the TAO was generally a LT (O-3) or LCDR (O-4) although, IIRC, a Senior Chief (E-8) was qualified. I don't know if he had the qual just to look good or if he actually stood the watch though.

Lookout was generally undesignated seamen. Countermeasures were controlled by the EWs. MG would've been a GM3 or GM2 as gun captain and anyone could get put on the .50 cal. I only spent a few days on a FFG though, so I never figured out who worked the torpedoes. Probably the TMs with help from the STGs as needed.
