FaT patterns -

How come I can only adjust a few dials in manual FaT mode - shouldn't be able to adjust them all? ...and to whatever angle/degree/distance/speed I want?

You are probably talking about the FATI torps. They had very limited functionalities and you can change only pattern leg length and direction. The dials comes from the more sophisticated FATII and LUT torps, where you can change many attributes, which may cause some mistakes.
