How does uboat selection work in SH5?

I'm running vanilla SH5 right now with just the TDW patch.

How does uboat selection work in SH5? I remember that in SH3, you started off with the smaller boats and could either switch to another type of boat later on, or keep your current boat and upgrade it. Does SH5 work in a similar way or does the campaign decide for itself what boat you're going to be on?
