How to maintain depth below 180 meters?
 
It seems you cannot go below 180 meters or so without becoming negatively buoyant and sinking at speeds below ahead 2/3. Doing so gets you detected, so I have just been avoiding depths below 180 meters.

What is the trick to depth maintenance below 180 meters? Just blow some compressed air? If I blow and rise, then drop below 180 again, will I stay neutrally buoyant?

I don't think you can maintain neutral buoyancy at those depths and will require a certain amount of speed for the hydroplanes to be used to maintain that depth. The fun really starts when you are damaged and have severe flooding and can only stop sinking by having the motors at flank speed when there are also 4 DD's circling above dropping depth charges, which is where I was at after my last convoy attack...:D

So from the video it appears it is possible to maintain depth at extreme depth.

I don't want to micro-manage this behavior - my chief should be doing it.

Is there a way to undo this behavior with a mod?

Well, I did it last night - manually set the dive planes to maintain depth while at silent speed at 194 meters. It works.

I don't know why I have to hold the chief's hand at depths greater than 180 meters though.
