SH3 Commander will allow you to input the exact day and month your first patrol in a career starts. The hour will still be chosen at random. I think from that point they are always chosen at random.

Not so. Because of limitations to the game not even Commander can let you choose the day. You can choose the month, but all careers start on the first.

You can choose the date of your next patrol by adjusting Commander's 'Days Spent In Base' to end on the date of your choosing.
