Prop pitch in IL-2
 
Ok can someone explain this to me in easy terms.

I don't seem to be able to make any difference to the speed of my plane using prop pithc excpet to go slower so I have 100% all the time

The prop pitch can make pretty big difference on dive, cruise & climb speeds if one knows how to use it. Then again, it is different for all the planes, so you really need to either go by trial & error or study the plane via documents & flight manuals.

EDIT: The common use I've seen is <80% in dive, >80% in climb.

Wow I am starting to use it in Stuka dives and its coool! now with the airbrakes on it makes that cool buzzing sound which i like

The prop pitch is there to give you the best speed, something that isnt important in Stuka dive. :p

I saw that and it makes little sense.

Basically flying straight and level at 1000 metres as an average if you are wanting max speed would 100% prop pitch be just fine.
If you are dog fighting then one doesn't have time to muck about.

The pitch of the prop doesn't give you the best speed it'll give you the most efficient use out of your engine.
