I noticed the TBT is held to 180 degrees FOV. Is there a key to transfer to the stern TBT station, or a way to unlock the forward station?

the same here its locked at 180 degrees and where can i find the minefields like in torpedo run in the current version of fall of the rising sun

You have to purchase the "U-Boat Missions" add-on to get to version 1.5..
