I have to vote for Das Boot. First off, that movie really made my nose twitch. You could literally SEE the stink on the sub crew. Not only that.. just watching it made me clausterphobic and edgy through the whole thing. Not many movies can do that.

Yep, there are a lot of great WWII movies out there with gripping sub/surface/air action -- but my favorite focuses on a more human dimension: Mr. Roberts, with Henry Fonda.
