Well capsizing is ok with me - even happened to Bismarck... But if by "more realistically" you mean that they should break up the moment they hit the bottom, I second that, that would be nice, even in not-that-deep waters...

Recently found pic of a torpedo attack taken by low flying German spotter plane. Picture has been crudely repaired:

I followed this tutorial to get that effect:

With a bit of playing around you can get a similar effect with other applications. The last pic shows it's 'lifting' slightly on the sides, as tape does when it's old and dry.
