They won the war, but they did lose the battle they glorify. That's probably why. People love a good "last stand".

Actually, Texas never really won the war. After declaring independence, Texans fought the Battle of the Alamo, resulting in the massacre of the Alamo defenders. Texas continued to fight against Mexico, but Mexico itself was in extreme disarray, almost in a state of civil war and its efforts to impose Mexican rule were deeply hindered by their political turmoil. Texas' independence was recognized by several European countries and the US. In 1845, Texas took up the US on its offer to annex the territory and the US then entered into what is known as the Mexican-American War in order to enforce its claims on Texas and what is now the area encompassing the US Southwest, including California. If the US had not intervened, and if the Mexican government had somehow unified, the real possibility exists Texas would have lost in the long run and Mexican food, music, and culture would have been widespread today...
