After attacking a coastal convoy in a Type II I was attempting to evade and escape when a few JU88 turned up on the scene and started to attack the convoy. Did me a favor as this aided my escape from the escorts and it was also interesting to watch. One of Goring's planes didn't make it home though.

Nope, there were some ships damaged but none were sunk. If I remember I sunk an ore carrier so the convoy didn't get away without loss.

Interestingly a few hours later at dusk I spotted a lone large merchant giving off loads of smoke and down at the bow. I got closer and it had been severely damaged. Unfortunately I had no torpedoes left so couldn't finish it off, but it had obviously been attacked by aircraft earlier on.

I snuck myself into Dover once upon a time, and was about to start sinking tankers... then one of them blew up. Oh, and there were airplanes. I just turned around and left. I don't share well.

Actually that can be a very good test of the 'reporting contacts' function....go to an allied base that has a) at least three ships in it and b) is obviously within combat range of a Luftwaffe base.
