You need to edit SH4/Data/Library/GerSubParts/Deck_Gun_GE105mm.sim.

Open it into S3D, go to the Wpn Cannon entry, and there you will find the ammo storage values for each type of shell.

What sub gun are you trying to change? I think the file pictured is for the German 105mm.
