Unfortunately there were far more mines floating about in RL than SH3 can handle
Germany laid the westwall barrage on 3rd Sept 39 for around 12 days right from Dutch coast to the Skagerrak

From KM Emden operational history

Of course the German barrage left mine free zones for uboats\KM units to enter and exit German waters so the British - having a guess at where they would be by using known ship lanes would mine those areas them selves hoping the Germans wouldnt know

Be nice to lay all known minefields but game would ctd for most as so intensive

Ive never hit a mine, but ive came close to them in my English channel crossings. (yes I still do them every once in a while.) but U-45, has had a encounter with a sub net out when going out of lorient.

On one occasion I hit my own net twice, with my brand new XXI :oops:. I was going out of Bergen, going through the wrong fjord (like I used to in stock game), and forgot to check the maps...
