Mods already exist for SH3 and SH4 to do just that. In fact someone even made a sextant for SH3. It should be doable for SH5 based on that fact alone, and it may even be possible for modders to do it better with SH5's scripting.
On the other hand it would take a lot of work, and would be better if built right into a game rather than added on afterwords.

Go to Search and Advanced Search. Put in Celestial Navigation Sextant, select Search Titles Only and use Ctrl to select SH3 and SH4 only, and you'll get a list of discussions on the subject. They may help you figure out how to do it yourself for SH5.
