My damage by fire mod from the FX_Update mod will cause damage from fires. The damage will take time to see flooding. Time will usually take 2-2+ hours. The ship might explode from the fire damage but that probably won't happen until 3-4+ hours. The best way to get it to sink from flooding/fire damage is to put shells all down one side of the ship and ensure there are fires on the front, middle, and rear of the ship. Even to see additional fires spread will take time, generally 1-2+ hrs. The flooding model was redone in the latest version of my FX_Update mod for the merchants. If you shell the ship all down one side trying to hit every compartment you will cause flooding. Note though that it will take multiple shots per compartment to have flooding start. The more shells you place into a compartment the faster the flooding will happen.
For you to see fireworks means the mod is not installed correctly. That is one thing I removed for sure with the mod.

You need to identify the ship correctly or have WEPS identify it for you (WEPS-->Torpedo Attack-->Identify target). This is important because it will set the correct mast height so you can use the stadimeter to get range measurement.

General Question on SH5 (since I have not bought it yet). Why do the merchants not try and to evade and run at engagment from a uboat? Is this a realism setting issue or is the AI just that bad?

Seem to have just one problem now. With the new install, I've included the German voices for authentic effect, but the subtitles are in German as well. Any ideas?

I believe this is the mod. (I've never used so I'm not 100% sure)

Stormy's DBSM v1.3 German No Magic Skills Dialog

Remove this mod, As from the description, it sounds like it adds German dialog.

In other news, I've come to realize that I've been installing the mods all wrong. I don't think I ever had anything right in the first place, except for some bits of TDW's UI and IRAI.

I feel so stupid. I want to give myself a perpetual facepalm.
