Are yes summer is here and out comes the barbecues nothing like the smell of burnt meat on the outside and under cooked on the inside, yummy in a couple of hours upset stomachs from under cooked food.

And not forgetting burnt to a crisp as well, along with that vile smell wafting in the air. Come on face facts we are useless when it comes to barbecues. :p

I get very flabbergasted when British relatives join us for a roast beef dinner and eat the outer edges, leaving the center, because it isn't "cooked sufficiently".:damn:

Similarly, I have another British relative who will take the best beef roast and throw it in a pot with water, potatoes and onions. Oh, mustn't forget a bay leaf or 2.

Indeed, love a good old American or Aussie barbie. We Canucks ain't too bad, nothing beats a good pacific salmon barbecue, except a Greek outdoor lamb or goat roast. :yep:

There is nothing wrong with British Cooking, the good stuff is very good.

A beef stew is great. True you should be using brisket not the best cuts as that is crazy but Our good old home cooking is great.

Lancashire Hotpot, Toad in the hole, Steak and Guinness pie etc....hmmmm

Hey having a big slice of steak and Guinness, steamed greens and potatoes on sitting on a nice plate served by a great pub landlady is so much better than a piece of veal topped with a couple of green beans and some fancy sauce that sits forlorn in the middle of the plate and seved by a surly garcon.. :p

I love barbecue. I wish we had a Texas barbecue place here in Connecticut. Come to think of it some catfish and hushpuppies would go down well too.

Now my mouth is watering! There's a place in Groton on Rt 12, not far from the Sub Base, that had pretty good ribs... dunno if it's still there though, I haven't been there in a few years, but it was great to come back to after a deployment.

He's doing lamb and bacon and it's burning nicely. We need help here in the U.K. how to cook on the barbecue.

I think the trick is to sear the cuts first, making sure the outer layers are cooked, and then moving the meat to a higher rack on the grill, if possible. This will cook the inside at a lower temperature (for a longer period of time, of course; don't be in a hurry!!), while the already-cooked outer-layer will help keep the inside juicy.

And of course, a good seasoning on those outer layers is essential ;)

Thing is BBQing isn't that hard....you just need to prep.

Most brits get the burgers straight out of the freezer and bung em on the barbie so they cook on the outside melt a little on the inside so need microwaving to make them safe.

You must be thinking of Russel's Ribs. I wasn't too impressed with them. Have eaten their once and never went back.

My candidate for best Barbeque is Flynt's in West Oakland, Ca. Best ribs, hot links,sauce and corn bread around. When I used to work night cutovers in Oakland, we used to go down there for shopping bags full of food. Nothing like being the only white guy for miles around. Got me prepared to do night cutovers in south-central LA and Compton. As far as cooking your own, My old man's technique was to sliver a clove of garlic or two, insert the slices into the meat, then marinate in a sauce of 1/3 soy sauce, 1/3 red wine & 1/3 olive oil for about 4-6 hours before throwing it on the grill. Keep the coals hot but have a squirt bottle handy to keep the flames down. Also score the fat so it cooks up crisp and adds to the flavor of the meat. I once ate at a barbecue/steak house in Phoenix, AZ calld Pinnacle Peaks. There, if you order a steak well-done, they bring you an old boot on a plate. I prefer mine seared on the outside and bloody on the inside, but then I was a butcher in high school.

The wife and I had a barbecue last night, some chinese ribs and a couple of rump steaks with salad rice and a couple of very chilled bottles of white grenache - very nice :O)

mmm....... Here it is a rainy Saturday morning and I'm hungry for some baby back ribs, tattie salad, roasted corn on the cob and a frosty margarita.

The very best thing about BBQ'ing is...... its Mens Work.

My neighbour has been reading up how to cook on a barbecue and is ashamed he got it wrong all these years, he puts it down to the great British tradition. Any way on Sunday he is going to give it a go, that is to say the correct way to cook. :)

Well I had one today, homemade burgers, cumberland ring and a nice bottle of Black Isle Brewery organic Heather Honey Beer.

Anyone got good burger recipies?

I get nice beef mince and grate onion and use that as a binder.

Also lamb and beef burgers are nice. I add a dash of pepper and a little salt.

Wondering what I can do to make them interesting.

Add garlic, or cumin, or paprika, or oregano, or mustard, a pinch of curry powder also adds an interesting flavour. Or add some crumbled feta cheese. Top the lamb burger with chutney or a yoghurt-mint sauce.
