I don't know if I'm doing something wrong in this mod, but the doesn't seem to be a standimeter available. Is this realistic?

It is yes. Pre-war attack periscopes were fitted with a combination range and AOB finder (the so-called RAOBF) that operated by stadimeter vertically and horizontally. The well-known C/2 attack periscope (large column with foot pedals) installed in wartime boats had none, only the graticule. This was both a cost-saving measure as well as due to the fact that German doctrine didn’t rely on ship data that could possibly be inaccurate, but instead used methods like matching course and speed on the surface, or plotting at maximum range using eyeballed ranges, or simple seaman’s eye estimation.

What derstosstrupp said.
In addition, they had tables to calculate ranges depending on the graticules. So they had information on how to calculate ship height based on how many marks the ship height is and how tall the masts are.
If you have the RAOBF (Range and Angle on Bow Finder) slide rule in your mods, you can use it as well. The ARB wide Gui and the MaGui have it. Probably others as well.
Here is an explanation how to use the one in Silent Hunter 5:
