Is there any information on which U-boat types will be featured in the game, or is it onlt the type VII?

Developer said Type XXI, but I guess that Type IX would be there also...

I think the Type IX is a must, but I definitely wouldn't mind the Type XXI. It might be a while before we see either of them though, as they will both require complex interiors as with the current boat.
