When I find a ship I want to attack i set the heading on the navigation map. But by the time I get to where the ship was it has moved and I have to make a new heading for the new position of the ship. Is there a way to have an officer follow the ship automatically? Or an easier way? I feel like I'm doing it wrong. Any help would be appreciated. (In case it matters I'm using auto targeting.)
If you are referring to "locking on" a ship and the U boat will follow that ship without your guidance-short answer is no.

Are you talking about a situation where you have a visual on the target or just a point on the map (radio report)?
In both cases to get to a good attack position you need to find your way ahead of the target. Basically you can estimate the coarse of the target to your map, estimate a good point well ahead of the target where you can get first, and set your heading there. To estimate the good attack spot you must take the targets speed into account to avoid the situation you described. Some targets are too fast for you to flank, better just leave them.
In reported convoys you usually have the speed and coarse of the convoy you can just plot on the map and take your time to get on that path (again well ahead of it). When in visual range you don't have that much time to maneuver your way to optimal attack position (discreetly) so sometimes you either have to take a chance and attack from akward position or back away, take some distance, and flank the target full speed to get ahead of her.
I don't think there's anything or anyone to do this part for you. This is something you must learn to do kaleun!
