If you do a quick search on Google for American S-Class submarines you'll find all kinds of sources. :salute:

Movies? It's not a great source, or even close, but it does have one cool scene of an S-Boat backing away from a pier - in full color!

The Historic Naval Ships Association webpage has a couple of gems on their Resources page. Select the Submarine, and Torpedo Fire Control heading, and scroll down a bit. You will see a document called Submarine Information and Instruction Manual. It is a training manual for S-Boat sailors.
On the same site, there is a page called Booklet of General Plans; scroll down until you see SS-131. The plans of S-26 (an Electric Boat type S-Boat) are available as a PDF file.
