If they were clever, they would find ways to dissolve and extract the protein and ingredients from insects' bodies, then solidify it again, press it into bars and sell it like a block of Tofu. They do so with "Fleischwurst" -

first it is all kind of meat remains and slaughter waste in a bin, then they add some enzymes, it becomes liquid alltogether and loses all looks and structure. Spice in, salt in, stir. Then another enzyme added, and it solidiefies again. The result has nothing that reminds of real meat's consistency, nevertheless is in high demand at least over here. (I personally do not like it, but that is exclusively taste-related).
What keeps people from eating insectoid protein or a larva, is the looks, and the fact that you eat all the internal stuff as well: little brains, all kind of imagined glibbery slobber, digestion system plus content, and so forth. This has to be bypassed, and acceptance will raise.

If you ever visit a pork packing plant and get a whiff of the kill floor, you'll never eat bacon or ham again. Though going through the area where the hot dogs are cooked smells like... Hey! Let's eat!

Becauue you imagine the looks of the original source/creature. You also would not eat chicken maybe if you would have seen what they do to it and how it claps its wings in panic and so on.
But take mealworms for example. Their protein is of very high quality, and their tiny bodies are cramped full with it - they are tiny little protein bombs. It is of a type that latest research says is easier to digest for the human digestion system than chicken or beef. Only the protein found in chicken eggs is of higher value, from a human digestion POV. If that mealworm protein is extracted like is being done with so many other ingredients in our cuisine that you would consider to be distasteful if only you would think about it, and then is presented in an unsuspicious, neutral form, then you would not care much. I would not eat a lolly stick full of fried mealworms (at least as long as I am not sitting in the wreck of an airplane in the middle of the rain forest). But give me the same thing in form of some slices of something feeling like Tofu and smelling and tasting like chicken for example, and I would not care at all.
And if I would prepare food for you and serve you that mealworm protein and would tell you it is Tofu, you would not care, too. :)
Do you eat gelatine? Wine gummy? It'S a distasteful stuff, if you know how it is made. And so much more there is that we only eat because we do not think about it.
