how is track angle determined?.
I'll recommend you to watch these great tutorial videos by Stoianm! They are fantastic. If you know your target's course (and ofcourse your own), you'll know your track angle. 90 degrees would be optimal.

Especially 4 bearings method and manual targetting tutorial are essential.
The arc between the course-line of the target and the course-line of the torpedo.
