So, The only mod's I am using after my disaster of a first try after 2 years away http://www.subsim.com/radioroom/showthread.php?t=194640 are:

NewUIs_TDC_6_9_0_ByTheDarkWraith
Torpedo_Speed_Abilitie_Fix_for_TDC_SH5_v120

I am using the SH5 enhanced dials for ALL scopes. So I tried to engage a target using the attack scope. I managed to pick the right type of ship via the silhouette book in the game, was able to use the stadimeter to get the correct range (checked via a ruler tool on the map) then I tried to do the speed (it said speed based off of observations) It gave me some stupid number like 400knots or some ****. After guesstimating 10knots. I tried to fire a torp, missed by a frak load way behind.

So then I realized I needed to lead the target (used to the game doing that for me) so I figured I needed to figure out AoB to lead the target. Couldn't figure out how to do that using the dials and such provided by the mod. Talking to the WEPS officer just gave me a setting I could change the AoB - so since I didnt know what to do after that to get the right setting I said screw it, called general quarters, blew ballast to surface fast, got on the deck gun and blew the main island all to hell with HE shells to knock out the radio, then was able to fire a torp on my mark with the UZO as the ship had stopped moving.

So my problem is how to use this mod to find out the remaining settings of ship speed and AoB (and anything else I may have missed)

I've also read a few basic guides, but I was hoping for some help with this specific mod, or another that is so much like it that your instructions would be applicable.

The farther the target is away the more error is in the speed calculation (this is because your accuracy with the stadimeter suffers the further the target is away). The speed calculation uses the TDC AOB dial as a value into the calculation. If the AOB is not set correctly you will get wacky readings for speed :yep:
