So I have one torp left, the target boxes lit. between keel, engine room and fuel bunker which gives me the best chance of a one shot kill on a medium sized ship?

If you can hit the fuel bunker, (or better yet munitions store), great. If not, I'd be looking for the front mast in the hopes of breaking two compartments and allowing her own momentum to accelerate the flooding. :arrgh!:

You could also consider hitting her aft to stop her and if that isn't enough, use the deck gun (weather permitting of course) to finish her off.
