Can't uninstall properly

Hi,
Pardon me if I am missing something obvious.
I have been trying to uninstall SH5 (I want a clean restart as when I load NewUIs_TDC_6_5_1_TheDarkWraith I never get the officers' panel, nor the old controls). When I uninstall, I always choose the option to delete saves etc. I also go over my PC carefully to make sure there is nothing of SH5 to be seen. However, each time I re-install, the saves are always there. Other mods I am using work OK but I would really like to have the older format options. I understood that they would be there by default after loading the mod. I am not all that experienced at modding etc, so I wouldn't be surprised if I am missing something basic, but I would be grateful for any suggestions.

Uninstall the game launcher and delete the ubisoft folder in programs . Make sure to uninstall the save game folder . Delete the main game ubisoft folder .

or try REVO uninstaller...there's a freeware version

Your saves are most likely being downloaded from Ubi. Ubi keeps a backup of your saves and they are sync'd at game launch.

Turn save sync off in the Ubi launcher.

Thank you guys for your help. I have now been able to reinstall without the previous saves, and things seem to be fine, except that I am not seeing the officers' shortcut bar, nor the familiar dials as per the earlier games. I think I have installed TheDarkWraiths NewUIs 6 5 1 correctly, using JSGME and before any other mod. In fact so far this time I have only installed one other mod, and it is working correctly.
Is there something I have to do to access these features, or should they be there by default?
