This is probably a silly question, but I'm not sure about the function of the rollback button or when I should use it.

Do you mean in SH3 Commander?
If so, when you select the automatic rollback in Commander, it means that when you exit the game Commander will undo any changes it made to the game files in order to implement the options/features you selected in Commander prior to loading the game for that session. (Those changes will then be re-implemented via Commander the next time you load the game from the Commander interface.)
Personally I recommend that you do select rollback in Commander, since this can avoid potential conflicts when you mod the game files outside of Commander in between gaming sessions.

The Rollback button undoes any changes Commander has made to your game files when loading the game from the Commander interface. You should always "roll back Commander" before making any other changes to those files, either with manual edits or by enabling/disabling mods in JSGME.
There is also an option in Commander for auto-rollback, which is what I described above - if selected, the rollback will be performed automatically each time you exit the game. That means if you decide to do some modding in between sessions, you don't have to worry about remembering to open Commander and telling it to roll everything back (by clicking the Rollback button).
I recommend selecting the auto-rollback option, it's just easier and safer.

Although,you have to be careful with auto-roll back selected,it gets you into the bad habit of not checking:oops:
If you load some mods in JSGME and they conflict during the loading process,you might get a dreaded CTD(crash to desktop) in which case SH3Cmdr wont auto roll back!!!:damn:
Unless you check straight away if it has,you can create all sorts of problems for your self:wah::damn::cry: Believe me I know:doh::nope::oops::damn:
