So here I am, sitting on the bottom of grid AM97, about 70 meters under water, just recovered from severe flooding, anything possible is repaired.
Problem:
Destroyer is circling above
Problem:
Both electric engines are KIA.

Only thing you could've done was to constantly keep changing depths, though (assuming you're in deep water) without any kind of forward or backwards momentum it can take minutes to just go up or down 10 meters. Normally you'd bottom the boat, though in this game the enemy can still pinpoint you and dc you to death sitting dead silent on the bottom. One thing I'd really hoped they would fix with SH5 (from what I hear its unchanged, just another grudge to put on the pile on why to avoid that version).

You were probably never going to get out of that one. As others point out, it's impossible to "fade into the background noise" on the bottom unless you happen to be below the thermal layer (and that's rarely at 70m).
Blowing ballast, surfacing and trying to zig-zag away is probably your best bet if a) the escorts do not yet have radar and b) surface visibility is reduced or minimum. With luck, you can surface right beside a DD and vanish into the murk. I've tried it twice and escaped, though got nailed by planes before I could get back home.

When all else fails, you can surface and go out in a blaze of glory with the deck gun instead of waiting to die in an incapacitated U-Boat.
All available options must be examined, when it really matters, you have no damage to the hull when it is good to go down so far now

If I blew ballast and circled, we would of won.
How do I know? My deck gun knocked out a destroyer at 2000m yesterday.

lol I actually did that a few times after downloading the no instant death screen mod... for some reason I was able to blaze into a taskforce with three Revenge BBs and numerous destroyers... while taking little damage even though it was on 84% realism lol

That's one of the problems with the game - you can shoot down dozens of planes, go toe-to-toe with heavily armed surface ships and win - do six impossible things before breakfast, actually. Mods have helped, but nothing seems to truly make it realistic. People keep trying, though.
