The Submarine Commander's Handbook, ("U.Kdt.Hdb."), 1943 describes the German submarine U-boat tactics . Note that this edition is from 1943 during which the Allies had effectively countered these tactics and the battle of the Atlantic turned in the Allies favour.

Just found this myself and thought I'd post a link to it -- but, of course, it's already here.
It's a great read though -- especially if you're like me and have never had anything to do with sub sims before!
BTW has anyone thought about including this in a user interface mod like how the rec manual shows up? It'd be great to read this (or have it handy) in game for operating procedures and/or to kill some time on a long drive :)

"B.d.U Budget Cut Effects:
i. U-Boats will be fitted with clocks that have only one hand. To tell the time accurately, captains are advised to sail due north, raise the periscope and see where the shadow falls.
ii. Crews will be supplied with a single bunch of bananas and one shank of ham irregardless of patrol duration. Said shank of ham and bunch of bananas must not be used by the Galley Chief as they will be required by the crew to monitor pitch and roll of the ship as the majority of on-board instrumentation won't work.
iii. We saved a few extra deutschmarks on crew uniforms by removing the captain's body from the neck down and have him rely upon telekinesis to move around the ship. The captain will now just require a hat.
iv. We cut back on hull strengtheners to save a few more marks. Pressure implosion will occur much earlier than your crew thinks.
v. We couldn't afford to buy a lot of chairs. If the Captain mans the hydrophone himself, sonarmen are required to sit on a pretend chair so to avoid hurting the captain's feelings about the fact that he's had his body removed and therefore can't actually sit."
